Vacherin – Mont D’Or 400g
From September to March, Vacherin cheese is available, as it is a seasonal product. The cheese is surrounded by spruce bark, which may appear dark-colored or even black due to the natural mold that helps develop its unique flavor. As the cheese matures, the crust takes on a crumpled appearance and develops a surface layer of mold. To reveal the beautiful soft yellow paste beneath, the top rind and its layer of surface mold should be removed.
Vacherin cheese is produced in the autumn when the cows produce less milk, resulting in a richer product. The Vacherin we offer here comes in a round shape weighing approximately 400g and is brine-washed. Its thick, velvety crust is orange-brown, and the bark that surrounds the cheese imparts a delightful flavor to it.
