Oxford Blue is a traditional blue cheese made in Oxfordshire, England. It is a handmade artisan cheese made from locally sourced cow’s milk and aged for eight weeks to develop its distinct flavour and texture.
The cheese has a creamy and buttery texture with a distinctive tangy and salty taste. It has a pale yellow interior with veins of blue-green mold throughout. The blue mold is created by piercing the cheese with stainless steel needles to encourage the growth of penicillium roqueforti.
Oxford Blue is perfect for adding depth of flavour to dishes such as salads, pasta, and sauces, or simply enjoyed on its own with a glass of red wine. It has won numerous awards, including a silver medal at the World Cheese Awards in 2017.
